Abstract
⺠Channa and Lates roes yielded 20.7% and 22.5% of roe protein concentrates. ⺠Protein content of concentrates was found to be 90.2% (Channa) 82.5% (Lates). ⺠Protein solubility was 3.93-54.6% and 1.6-55.5% in Channa and Lates concentrates. ⺠SDS-PAGE revealed that protein bands at 95 and â¼30 kDa were predominant. ⺠Sorption isotherms indicated both roe protein concentrates are hygroscopic.
