Abstract
► Channa and Lates roes yielded 20.7% and 22.5% of roe protein concentrates. ► Protein content of concentrates was found to be 90.2% (Channa) 82.5% (Lates). ► Protein solubility was 3.93-54.6% and 1.6-55.5% in Channa and Lates concentrates. ► SDS-PAGE revealed that protein bands at 95 and ∼30 kDa were predominant. ► Sorption isotherms indicated both roe protein concentrates are hygroscopic.
