Abstract
⺠We use EDUF technology for the fractionation of snow crab by-products hydrolysate. ⺠We recover an anionic peptide fraction which exhibited antibacterial peptide. ⺠We detect a specific 814 Da peptide molecular weight. ⺠We propose that this peptide is responsible for antibacterial properties.
