Abstract
⺠Study on sulphur aroma compounds from reaction of ascorbic acid with cysteine. ⺠Study on mechanism of formation of sulphur aroma compounds. ⺠Some sulphur compounds formed solely by cysteine degradation. ⺠Other sulphur compounds formed by reaction of ascorbic acid with cysteine. ⺠C-1 of ascorbic acid was not involved in the formation of sulphur aroma compounds.
