Abstract
⺠GN and IF rhea muscles contained only fast-twitch oxidative-glycolytic fibres. ⺠IF rhea muscle had high postmortem residual glycogen concentrations. ⺠Rhea IF muscle presented high quantities of mitochondria. ⺠Glucose could be involved in post-slaughter meat oxidation.
