Abstract
► Starfruit is a popular tropical fruit, with potential health promoting properties. ► This is the first report on the effects of ultraviolet (UV) radiation on starfruits. ► UV was effective in reducing the microbial load of starfruit juice. ► UV enhanced some of the bioactive antioxidant compounds in starfruit juice. ► Results obtained will be useful for the implementation of UV technology on a pilot scale.
