Abstract
⺠Starfruit is a popular tropical fruit, with potential health promoting properties. ⺠This is the first report on the effects of ultraviolet (UV) radiation on starfruits. ⺠UV was effective in reducing the microbial load of starfruit juice. ⺠UV enhanced some of the bioactive antioxidant compounds in starfruit juice. ⺠Results obtained will be useful for the implementation of UV technology on a pilot scale.
