Abstract
⺠Development of screen-printed biosensors for glucose, fructose and ethanol. ⺠Application of the biosensors to the monitoring of alcoholic fermentations. ⺠Evaluation of the fermentation profiles obtained using two different yeast strains. ⺠Highlighting of the differences in metabolic behaviour of the two strains. ⺠Biosensor data in good agreement with spectrophotometric analyses.
