Abstract
► Yeast hydrolysate before ultrafiltration (UF) showed higher thermal stability than after UF. ► Yeast hydrolysates before and after UF showed 3 and 4 thermal transition peaks in their thermograms, respectively. ► Neuropeptide Y expression was slightly affected by heat treatment as compared to the non-heat treatment. ► The results suggest that yeast hydrolysate can be use as an anti-obesity material after heat treatment.
