Abstract
► Membrane-bound PPO (mPPO) was identified responsible for browning in Snake fruit. ► The enzyme was isolated, purified and characterised. ► mPPO was successfully isolated using temperature-induced phase partitioning technique. ► It was notably active in extreme alkaline and acidic regions compared to PPO from other sources. ► mPPO inactivation can be achieved by use of pH in combination with inhibitors studied.
