Abstract
⺠Membrane-bound PPO (mPPO) was identified responsible for browning in Snake fruit. ⺠The enzyme was isolated, purified and characterised. ⺠mPPO was successfully isolated using temperature-induced phase partitioning technique. ⺠It was notably active in extreme alkaline and acidic regions compared to PPO from other sources. ⺠mPPO inactivation can be achieved by use of pH in combination with inhibitors studied.
