Abstract
► Lipase-catalysed ethanolysis of shark liver oil has been investigated. ► Discrimination against diacylglycerol ether was studied with up to 10 lipases. ► The best selectivity and stability were obtained with Novozym 435. ► Novozym 435 led to disappearance of triacylglycerol, to produce mainly ether lipids.
