Abstract
► The leaves were previously traditionally used as salad the flowers, and as sweeties in Alpine regions. ► Twenty-three metabolites including a new dimeric glucoside were identified. ► Fatty acids, β-carotene, ascorbic acid, and minerals were quantified. ► Antioxidant capacity was quantified with an ORAC assay. ► The metabolite profile has been compared to that of three related species.
