Abstract
⺠The leaves were previously traditionally used as salad the flowers, and as sweeties in Alpine regions. ⺠Twenty-three metabolites including a new dimeric glucoside were identified. ⺠Fatty acids, β-carotene, ascorbic acid, and minerals were quantified. ⺠Antioxidant capacity was quantified with an ORAC assay. ⺠The metabolite profile has been compared to that of three related species.
