Abstract
► We have developed a processed soya milk utilising an industrial protease. ► The processed soya milk has enhanced ACE-inhibitory activity. ► We have purified 8 novel ACE-inhibitory peptides from the processed soya milk. ► The IC50 values of the peptides are comparable to those from other food sources. ► Low IC50 values and lack of bitter taste make them ideal base food components.
