Abstract
► Phase behaviour of gelatin/agarose mixtures in the presence of polydextrose is illustrated. ► Mixtures of agarose and gelatin form a bicontinuous phase separated system. ► Addition of polydextrose to the binary system hinders extensive aggregation of agarose. ► Condensed preparations of gelatin/agarose with polydextrose exhibit rubber-to-glass transition phenomena.
