Abstract
⺠Phase behaviour of gelatin/agarose mixtures in the presence of polydextrose is illustrated. ⺠Mixtures of agarose and gelatin form a bicontinuous phase separated system. ⺠Addition of polydextrose to the binary system hinders extensive aggregation of agarose. ⺠Condensed preparations of gelatin/agarose with polydextrose exhibit rubber-to-glass transition phenomena.
