Abstract
⺠Amaranth extensive hydrolysates have high ACE inhibitory activity. ⺠These hydrolysates are effective in reducing blood pressure of rats (SHR). ⺠The hydrolysates would be acting at the local or autocrine rennin-angiotensin system.
