Abstract
⺠Chitosan extracts from Metapenaeus stebbingi shells. ⺠Physicochemical characteristics of extracted chitosan compare to commercial one. ⺠Extracted chitosan has low molecular weight and high deacetylation degree. ⺠Water and fat binding capacities of extracted chitosan are high.
