Abstract
⺠Photo-oxidation of whey proteins was studied in the presence of PUFA. ⺠Protein photo-oxidation is intensified by PUFA oxidation. ⺠Besides degradation of essential amino acids, protein-lipid adducts are formed. ⺠The oxidation reactions continue even after complete degradation of the photosensitizer.
