Abstract
► Photo-oxidation of whey proteins was studied in the presence of PUFA. ► Protein photo-oxidation is intensified by PUFA oxidation. ► Besides degradation of essential amino acids, protein-lipid adducts are formed. ► The oxidation reactions continue even after complete degradation of the photosensitizer.
