Abstract
⺠Procyanidins protect fish muscle against lipid oxidation. ⺠Procyanidins retard extensively the decay of endogenous α-TOH. ⺠Procyanidin-supplementation protects endogenous AA at short term. ⺠Procyanidins reinforce the antioxidant defense of muscle via regeneration of α-TOH.
