Abstract
⺠Inactivation kinetics of peroxidase and polyphenol oxidase were determined. ⺠The intact fresh leaf after freeze drying retained the phenolic profile. ⺠Phenolics of Rabdosia serra leaf showed good anti-tyrosinase and α-glucosidase activities. ⺠Various drying treatments caused significant losses of phenolics.
