Abstract
► Hepatopancreas of Pacific white shrimp yielded the higher lipid content than cephalothorax. ► Lipids from both hepatopancreas and cephalothorax had high contents of PUFA and carotenoids. ► Deterioration of lipids increased as hepatopancreas and cephalothorax were stored in ice for a longer time.
