Abstract
⺠Phenolic extracts from red and white wines were tested against tert-butyl hydroperoxide (TBH) oxidising action. ⺠TBH caused the disruption of epithelial integrity in Caco-2 cell monolayers. ⺠Membrane lipid peroxidation was highlighted by malondialdehyde, hydroperoxides and 7-ketocholesterol detection. ⺠A direct antioxidant action of the extracts was pointed out. ⺠Extracts exerted a comparable activity in spite of differences in their composition.
