Abstract
► A spectrophotometric method was developed to quantify hesperidin of citrus-based foods. ► It uses a fungal diglycosidase to quantitatively hydrolyse hesperidin to hesperetin. ► It does not require sample pre-treatment and can be used for high throughput assays.
