Abstract
⺠Reducing sugars method for hydrolyzed EPS can be used no matter to EPS composition. ⺠EPS quantity in kefir of different brands varied at 50-200 mg/l. ⺠Temperature optimum for kefiran production by kefir grains was about 30 °C.
