Abstract
⺠The leaves of Jerusalem artichoke possess strong radical scavenging activities. ⺠The high antiradical activities ascribe to the abounding phenolic compounds. ⺠Chlorogenic acid and 1,5-dicaffeoylquinic acids are the major active compounds.
