Abstract
► The pomological features and allergen profiles in twelve apple cultivars were analysed. ► Some traditional cultivars showed lower allergen content. ► After further tests, some fruits could be included in the diet of allergic subjects. ► The allergen microarray allows a quick test of food potential allergenicity. ► The knowledge of the allergen pattern of foods allows the design of a personalised diet for each patient.
