Abstract
⺠Spray-dried rosemary extracts were obtained following a 33 Box-Behnken design. ⺠In-process set of conditions had significant impact on the powder properties. ⺠Spray drying may be attractive in the development of new products of rosemary. ⺠Spray dried extracts may be used in nutraceutical therapy and food preservatives.
