Abstract
► The physicochemical and antioxidant changes during apple growth were investigated. ► The physicochemical and antioxidant changed radically after the 85th DAFB. ► A thinning date might be chosen around the 85th DAFB for unripe apples utilisation. ► Antioxidant activity was highly affected by the chlorogenic acid content.
