Abstract
⺠The physicochemical and antioxidant changes during apple growth were investigated. ⺠The physicochemical and antioxidant changed radically after the 85th DAFB. ⺠A thinning date might be chosen around the 85th DAFB for unripe apples utilisation. ⺠Antioxidant activity was highly affected by the chlorogenic acid content.
