Abstract
⺠ACE inhibitor peptides purified from HEWL hydrolysate by papain and trypsin. ⺠The F7 fraction was the most potent ACE inhibitor and composed of 12 residues. ⺠The F7 peptide (FESNFNTQATNR) exhibited a IC50 (21 μM) against ACE. ⺠Calculating of kinetics' parameters of inhibition for the identified peptide.
