Abstract
► ACE inhibitor peptides purified from HEWL hydrolysate by papain and trypsin. ► The F7 fraction was the most potent ACE inhibitor and composed of 12 residues. ► The F7 peptide (FESNFNTQATNR) exhibited a IC50 (21 μM) against ACE. ► Calculating of kinetics' parameters of inhibition for the identified peptide.
