Abstract
► 1H NMR relaxation was measured in solutions of sucrose, fructose and glucose. ► Sucrose is more hydrated than glucose or fructose in aqueous solutions. ► Fructose displays the fastest exchange with water, followed by glucose and sucrose. ► The mobility of water and the exchange rate decrease with sugar concentration.
