Abstract
⺠1H NMR relaxation was measured in solutions of sucrose, fructose and glucose. ⺠Sucrose is more hydrated than glucose or fructose in aqueous solutions. ⺠Fructose displays the fastest exchange with water, followed by glucose and sucrose. ⺠The mobility of water and the exchange rate decrease with sugar concentration.
