Abstract
⺠Phosphorescence from vanillin monitors dynamics in amorphous solid carbohydrates. ⺠Phosphorescence mainly quenched by secondary relaxations in carbohydrate glass. ⺠Dynamics varies with length in the homologous series glucose to maltoheptaose. ⺠Activation energies for quenching increase with temperature in the glassy state.
