Abstract
► Functional properties of dietary fibre (DF) powder from lime residues were studied. ► Pretreatments prior to drying did not have significant effect on DF composition. ► Pretreatment help improve the functional properties of DF powder. ► Powder with smaller particle size exhibited better functional properties.
