Abstract
⺠Functional properties of dietary fibre (DF) powder from lime residues were studied. ⺠Pretreatments prior to drying did not have significant effect on DF composition. ⺠Pretreatment help improve the functional properties of DF powder. ⺠Powder with smaller particle size exhibited better functional properties.
