Abstract
⺠Turanose, a sucrose isomer, is a potential alternative sweetener in food industry. ⺠An efficient bioprocess was developed for turanose production using amylosucrase. ⺠Maximal production yield of turanose was 56.2% under the optimised reaction condition. ⺠High-purify turanose (94.7%) was separated by using a preparative recycling HPLC. ⺠Major reaction pathway of amylosucrase shifted by controlling substrate concentration.
