Abstract
⺠Rapidly dried onion powder contains high quercetin derivatives and pectin contents. ⺠Hot-water extraction is an effective method to extract quercetin derivatives. ⺠Enzymatic treatment with cellulase and pectinase can release free quercetin. ⺠Animal experiment indicates the onion powder has the anti-atherogenic effect.
