Abstract
⺠A predictive model was developed describing cell survival during storage at 4 °C. ⺠Citric acid had a positive effect on cell survival. ⺠The mathematical model was able to predict adequately cell survival in most juices. ⺠Cell survival was low in juices with high levels of polyphenols.
