Abstract
⺠HHP treatment showed a higher antioxidant activity and aloin content. ⺠HHP treatment of 500 MPa lessens the total phenolic content, vitamin C and E. ⺠Samples treated by HHP at 400 MPa showed a higher in mineral content.
