Abstract
⺠We study the interaction at acidic pH between gliadins and anthocyan derivatives. ⺠UV spectroscopy data show that the amount of anthocyan-gliadins “complex” depends on the structure of anthocyan used. ⺠NMR data indicate the epitope on anthocyan that interact with gliadins. ⺠The increasing of β-sheet in secondary structure of gliadins is highlighted by mean of IR spectroscopy.
