Abstract
► We study the interaction at acidic pH between gliadins and anthocyan derivatives. ► UV spectroscopy data show that the amount of anthocyan-gliadins “complex” depends on the structure of anthocyan used. ► NMR data indicate the epitope on anthocyan that interact with gliadins. ► The increasing of β-sheet in secondary structure of gliadins is highlighted by mean of IR spectroscopy.
