Abstract
► Gilthead sea bream (Sparus aurata) and sea bass (Dicentrarchus labrax) were used. ► Fish were fed with two experimental diets: olive pomace and olive pomace oil. ► Gilthead sea bream fed with olive pomace diet exhibited satisfactory growth rate. ► Improved gilthead sea bream exhibited better cardio protective properties. ► Thus, a waste of olive oil industry is used in order to improve fish quality.
