Abstract
⺠Bioinformatic analysis showed that bean proteins contain bioactive peptides. ⺠Highest antioxidant activity was found in bean protein isolate hydrolysates. ⺠Phaseolin and lectin hydrolysates showed a pro-oxidant effect. ⺠Phaseolin hydrolysates had higher copper and iron chelating activity.
