Abstract
⺠LOX activity was assessed in 57 accessions of three Triticum species. ⺠pH optima and kernel fractions distribution were also studied. ⺠LOX activity ranking was Triticum aestivum > Triticum turgidum > Triticum monococcum. ⺠All einkorns and some emmer and durum accessions showed low LOX activities. ⺠LOX activity was maximum at pH 5-6 and was higher in the germ followed by the bran and endosperm.
