Abstract
⺠Fructose-amino acid MRPs showed higher antioxidant and ACE inhibitory activities than glucose. ⺠Only fructose- and glucose-tyrosine MRPs showed high yeast α-glucosidase inhibitory activity. ⺠Sugar-tryptophan and -tyrosine MRPs exerted higher biological activities than the other MRPs.
