Abstract
► Fructose-amino acid MRPs showed higher antioxidant and ACE inhibitory activities than glucose. ► Only fructose- and glucose-tyrosine MRPs showed high yeast α-glucosidase inhibitory activity. ► Sugar-tryptophan and -tyrosine MRPs exerted higher biological activities than the other MRPs.
