Abstract
► Photodegradation of natural high-potency sweetener monatin in beverage model system. ► Most of the monatin disappeared and a number of degradation products appeared. ► These degradation products were isolated and characterised in the present study. ► On the basis of these identified structures a photodegradation pathway is proposed.
