Abstract
⺠Photodegradation of natural high-potency sweetener monatin in beverage model system. ⺠Most of the monatin disappeared and a number of degradation products appeared. ⺠These degradation products were isolated and characterised in the present study. ⺠On the basis of these identified structures a photodegradation pathway is proposed.
