Abstract
⺠Heat induced potential allergenicity change of ovotransferrin was investigated. ⺠Heat induced structure change of ovotransferrin was also investigated. ⺠Varied heating affects changes of potential allergenicity and conformation of OVT. ⺠More severe heating causes more denaturation and less immunoreactivity. ⺠Heating destroyed predominantly the conformational epitopes of OVT.
