Abstract
► Heat induced potential allergenicity change of ovotransferrin was investigated. ► Heat induced structure change of ovotransferrin was also investigated. ► Varied heating affects changes of potential allergenicity and conformation of OVT. ► More severe heating causes more denaturation and less immunoreactivity. ► Heating destroyed predominantly the conformational epitopes of OVT.
