Abstract
⺠βâ²-component is a major allergen in chum salmon roe. ⺠The fragments with >10 kDa remains throughout the pepsin-trypsin digestion. ⺠Sequence of 31-Y to 119-Q is a peptide portion with proteolytic resistance. ⺠The IgE-binding ability of βâ²-component is stable to the proteolytic digestion.
