Abstract
► Anticholinesterase, antioxidant, toxicity effect of three dietary plants studied. ►Glycinemax has shown the most inhibition against AchE activity and DPPH radical. ► G.max showed the least cytotoxicity in BSL assay indicated its safety as a nutrient. ► G.max rich diet has beneficial effects in health promoting and cognitive disorders.
