Abstract
⺠A new antioxidant peptide was purified from chickpea protein hydrolysates. ⺠The amino acid sequence of Fra.7 is Asn-Arg-Tyr-His-Glu. ⺠Fra.7 has high antioxidant and metal ion chelating activities.
