Abstract
► The moisture content, pH, conductivity, colour and minerals were determined in mono-floral honey. ► The most abundant minerals were potassium, phosphorus and calcium, potassium made up 73%. ► The heavy metal contents (Cd, Pb and Zn) of the honey types investigated were very low. ► A large range of mean total mineral contents, honeydew the highest, vipers bugloss the lowest. ► Strong positive relationships between conductivity and pH with mean total mineral content.
