Abstract
⺠ACE inhibitory properties of lentil protein hydrolysates and kinetics were studied. ⺠ACE inhibitory activity varied as a function of the type of enzyme used for digestion. ⺠IC50 values of 0.053 and 0.190 mg/ml were obtained for the different hydrolysates. ⺠The inhibition mechanism was found to be non-competitive. ⺠Use of hydrolysates as bioactives rather than purified peptides may be of interest.
