Abstract
► α-Glucosidase inhibitory substance from fructose-tyrosine Maillard reaction products isolated. ► The compound was identified as 2,4-bis (p-hydroxyphenyl)-2-butenal (C16H14O3). ► The IC50 value of 2,4-bis (p-hydroxyphenyl)-2-butenal on α-glucosidase inhibition was 4.00 μg/ml. ► Ki value was 0.870 mM and noncompetitively inhibits the p-NPG hydrolysing activity.
