Abstract
⺠The amorphous content of starch is usually estimated by an indirect complex fashion. ⺠Hyper-DSC possesses increased sensitivity to quantify amorphous content in starch. ⺠Hyper-DSC is a rapid and reliable method to quantify amorphous content in starch. ⺠Hyper-DSC will be applicable to wide range of applied studies.
