► A balance ratio of saturated and unsaturated fatty acids in Jordanian camel milk. ► Highest ratio of long chain and unsaturated fatty acids in camel milk from Al Umari. ► Camel milk from Al Umari decreasing the incidence of cardiovascular diseases. ► Decreasing level of short chain fatty acids in Al Umari (reduce off-flavour). ► Camel milk can be used for infant formula and nutritional purposes (lack of β-lactoglobulin).
