Abstract
⺠A balance ratio of saturated and unsaturated fatty acids in Jordanian camel milk. ⺠Highest ratio of long chain and unsaturated fatty acids in camel milk from Al Umari. ⺠Camel milk from Al Umari decreasing the incidence of cardiovascular diseases. ⺠Decreasing level of short chain fatty acids in Al Umari (reduce off-flavour). ⺠Camel milk can be used for infant formula and nutritional purposes (lack of β-lactoglobulin).
