Abstract
⺠A novel oxygen scavenger (OS) using iron nanoparticle was produced. ⺠Iron nanoparticle was prepared by liquid phase reduction method. ⺠Nanosised OS has a higher O2 absorption capacity than conventional OS. ⺠Nanosised OS has the potential application in oxygen-sensitive foods.
