Abstract
⺠Antioxidants from potato peels were extracted by Pressurised Liquid Extraction (PLE). ⺠Antioxidants from potato peels were extracted by conventional stirring and by heating. ⺠Pressurised Liquid Extraction conditions did not enhance extraction yields. ⺠Ethanolic extractions resulted in higher yields than methanolic extractions. ⺠Potato peel extracts could be used in the pharmaceutical industry, rather than food.
